Bran Muffin Recipe

Bran Muffins

Yield: Makes 12 muffins

Ingredients

  • 1 1/4 cup all-purpose flour
  • 1 cup bran
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup brown sugar
  • 1/2 cup chocolate chips (or raisins, dried cranberries)
  • 1 cup buttermilk or sour milk
  • 1/3 cooking oil
  • 3 Tbsp molasses
  • 1 egg
  • 1/2 tsp vanilla

Instructions

  1. Preheat oven to 375 degrees
  2. In a large bowl, combine all dry ingredients, mix.
  3. Add remaining ingredients, beat with a spoon until just mixed.
  4. Fill greased muffin cups 3/4 full.
  5. Bake in preheated oven for 20 - 25 minutes.
  6. Let stand 5 minutes.

Notes

To make sour milk, add milk to 1 Tbsp vinegar to measure 1 cup.

    You could try substituting it for honey or maple syrup, but the flavour of the muffins could be quite different. Although still tasty I’m sure! Hope that helps!

    Hi Melissa, I freeze my muffins after I bake them. I would say they would taste the best if you eat them within three months. I also wrap the muffins individually in plastic wrap (makes it easy to grab + go), then put them all in a large freezer bag. Hope that helps!
