
Ingredients
- 1 1/4 cup all-purpose flour
- 1 cup bran
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup brown sugar
- 1/2 cup chocolate chips (or raisins, dried cranberries)
- 1 cup buttermilk or sour milk
- 1/3 cooking oil
- 3 Tbsp molasses
- 1 egg
- 1/2 tsp vanilla
Instructions
- Preheat oven to 375 degrees
- In a large bowl, combine all dry ingredients, mix.
- Add remaining ingredients, beat with a spoon until just mixed.
- Fill greased muffin cups 3/4 full.
- Bake in preheated oven for 20 - 25 minutes.
- Let stand 5 minutes.
Notes
To make sour milk, add milk to 1 Tbsp vinegar to measure 1 cup.












can you sub the molasses for anything?

You could try substituting it for honey or maple syrup, but the flavour of the muffins could be quite different. Although still tasty I’m sure! Hope that helps!

Do you freeze these before or after you bake them? and how long do you find they freeze well for? Thanks

Hi Melissa, I freeze my muffins after I bake them. I would say they would taste the best if you eat them within three months. I also wrap the muffins individually in plastic wrap (makes it easy to grab + go), then put them all in a large freezer bag. Hope that helps!
