This week The Real Canadian Superstore has fresh coconut on sale for $0.98 each. Here are some ideas on how to use it:
- How to Open a Coconut
- Fresh Coconut Layer Cake
- Coconut Relish
- Chicken Curry with Green Apple and Coconut Chutney
- Fresh Coconut Icing
- Fresh Fruit Kabobs with Key Lime Coconut Dip
- Coconut Flan and Coconut-Crusted Chicken (2 recipes on same page)
- Fresh Coconut Cake
- Fresh Coconut Milk
- Butter Chicken
Have you got any other uses for fresh coconut? Let us know!
Also, I may not be able to get the weekly coupon match-up posts up this week as I’m still on the road and have very limited access to internet!

Simply Frugal, I love your coupon matchups and information about offers, but how to use coconut in Canada in February? How about how to use potatoes or turnip, not something that has to be shipped thousands of kilometres for us to buy at $0.98 each? I would rather be frugal with a conscience. I won’t even talk about the real cost of shopping at Walmart.

It’s actually the Superstore that has the sale and coconut is an unusual ingredient…that’s why I chose it. Feel free to not buy a coconut!
