Easy and Inexpensive Black Bean and Salsa Burritos

Black Bean Burritos

I thought I would post my recipe for the Black Bean burritos that my husband and I have been enjoying lately!  Keep in mind that I’m a big fan of simple, so they’re nothing fancy.  But the result is actually quite delicious!   Also, the ingredient amounts I have listed are what I use for the two of us. (makes about 4 burritos)  Adjust accordingly for your family.

Easy and Inexpensive Black Bean and Salsa Burritos
 
Ingredients
  • 4 tortilla shells
  • 2 eggs
  • ½ can black beans
  • ½ a green pepper (chopped)
  • ½ can whole kernel corn
  • salsa (I think I used a bit more then ½ cup, not entirely sure)
  • shredded cheddar cheese
Instructions
  1. Preheat oven to 350 degrees
  2. Scramble the eggs in a large pan with the green pepper
  3. Add the corn and black beans to the eggs
  4. Saute everything for a bit
  5. Add the salsa, heat through
  6. Place the bean and egg mixture in the center of the tortilla shells. And add shredded cheddar cheese
  7. Wrap the filled tortilla shells burrito style
  8. Place in heated oven for about 5 minutes
  9. Enjoy!
