Menu Plan for the Week of March 12, 2012

Here’s what I’ve got planned for our menu this week!  I’ll freeze any freezable leftovers that we may have or we might enjoy the leftovers for lunches this week :)

I’d also like to make these buttermilk biscuits for the freezer.  I intend on making the dough, cutting it into biscuit shapes, then flash freezing the raw dough on a cookie sheet.  Once they’re frozen, I’ll put them in a freezer bag.

  2. Chicken stir fry/ginger chicken and rice (still deciding)
    Tacos
    Roast Beef, potatoes, gravy, fried cabbage
    grilled fish, rice, salad, buttered turnips
    Pizza, fresh veggies
    Pancakes, bacon and fruit
    ???

  3. Oops! Since it’s my anniversary tomorrow I am doing the roast tomorrow, the pizza on Wed for my son’s birthday and the rest is flexible

  4. MONDAY – Baked tilapia with veg and rice (I try to have fish once a week)
    TUESDAY – Quinoa with spinach and grilled veg (I try to have one vegetarian day a week)
    WEDNESDAY – Baked seasoned chicken breast with veg and rice
    THURSDAY – Pasta with meat sauce (sauce is from my freezer meals)
    FRIDAY – Soup with homemade hummus and pita chips (sorry, soup is not homemade…haven’t quite mastered that yet)

    Every Sunday, I try and cook off 4 chicken breast, a large batch of rice with the rice cooker and one freezer meal. This way dinners are ready to go the evening of! My boyfriend and I ALWAYS bring our lunches to work so doing as much prep as I can on Sunday allows for lunches to be packed with ease the night before. Plus, this way we are not stuck with PB&J everday.

    Tues – Chicken stir-fry
    Wed – Leftover pizza slices (from Monday) & soup /salad
    Thurs – Whole wheat spaghetti & tomato sauce
    Fri – Take out
