Overnight Oats

Here’s a recipe for one of my current breakfast favorites: overnight oats! They’re incredibly versatile, so you can easily switch things up to match whatever you’re craving.

Not only are these overnight oatmeal jars seriously delicious and filling, they're also packed with a ton of nutrients.

Chia seeds don’t have much flavour, which makes them easy to add to just about anything, but they’re packed with nutrition. They’re a great source of fibre, omega-3 fatty acids, and antioxidants, and can support heart health, aid digestion, help you feel fuller longer, and promote more stable blood sugar levels.

These overnight oats keep well in the fridge for several days (just wait to add fresh fruit until you’re ready to eat). I usually make a couple at a time, but prepping a full week’s worth would be a great time-saver!

My current favourite combo is brown sugar with fresh berries, whatever I have on hand. Grapes are surprisingly tasty too! You could also try apple and cinnamon for a cozy twist, or peanut butter and banana for something a little more indulgent. Honestly, the possibilities are endless.

Basic Overnight Oats Recipe:

Ingredients:

  • 1/4 cup uncooked rolled oats
  • 1/4 cup plain Greek yogurt
  • 1/4 - 1/3 cup milk of choice
  • 1 1/2 tsp chia seeds
  • 1/4 tsp vanilla
  • Sweetener of your choice
  • Fresh Fruit
  • Protein powder (optional)

Instructions:

  1. Place oats in a small canning jar or container.
  2. Add in yogurt, milk, chia seeds, vanilla, sweetener, protein powder (optional).
  3. Stir up, then place in the refrigerator covered, to eat the next morning.
  4. Add fresh fruit/toppings just before eating.

Here are some add-in/topping suggestions:

  • Apples and cinnamon
  • Peanut butter and bananas
  • Shredded carrots, cinnamon, nutmeg
  • Cocoa powder and cold brewed coffee (mocha!)
  • Cocoa powder, peanut butter, chocolate chips
  • Peanut butter and jam

Ingredients
  • 1/4 cup uncooked old fashioned rolled oats
  • 1/4 cup plain Greek yogurt (regular yogurt works too)
  • 1/4 - 1/3 cup milk of choice
  • 1 1/2 tsp chia seeds
  • 1/4 tsp vanilla
  • Sweetener of your choice
  • Fresh fruit
  • Protein powder (optional)
Instructions
  1. Place oats in a small canning jar (or container)

  2. Add in yogurt, milk, chia seeds, vanilla, your preferred sweetener (brown sugar, honey, maple syrup, stevia, jam, etc.) and protein powder (optional).

  3. Stir up, then place in the refrigerator covered, to eat the next morning.
  4. Add fresh fruit and toppings just before you eat.

Fall M&M Monster Cookies

I was in a cookie rut. Whenever my daughter and I make cookies, it always seems to be Peanut Butter Cookies. Don't get me wrong, peanut butter cookies are delicious (and my husband's favourite), but sometimes I want something a little different!

So, enter Fall M&M Monster Cookies! They're easy to put together and delicious so they're sure to please! And they still include peanut butter, so my husband is on board. 🙂 These Fall M&M Monster Cookies have everything. Peanut butter, oatmeal, chocolate chips and M&M's, make for my FAVORITE Cookie!

INGREDIENTS 

  • 1 1/2 Cup peanut butter, smooth or chunky
  • 1 Cup sugar
  • 1 Cup brown sugar, packed
  • 1/2 Cup butter, softened to room temperature
  • 3 eggs
  • 1 tsp vanilla
  • 4 1/2 Cups oatmeal
  • 2 tsp baking soda
  • 1 Cup chocolate chips
  • 1 Cup Fall colored M&M's (red, yellow and brown) + extra to press on top of the cookies prior to baking

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Combine the peanut butter, sugar, brown sugar, butter, vanilla, baking soda and eggs.
  3. Add in the oatmeal one cup at a time, stirring well.
  4. Add in the 1 cup of chocolate chips and the 1 cup of Fall M&M's.
  5. Drop by rounded tablespoon onto your baking sheets about 2-3" a part. Press a few extra M&M's into the tops of each cookie.
  6. Bake for 9-13 minutes. Do not overbake. Cookies will be slightly soft when you remove them from the oven but will set as they cool.

*Makes approximately 3 dozen cookies.

Ingredients
  • 1 1/2 Cups peanut butter smooth or chunky

Our Favourite Homemade Taco Seasoning 

Taco night is a regular occurrence in our house. It’s quick, easy, and everyone’s happy! I love it when no one complains about what's for dinner!

But here’s the thing… I stopped buying those taco seasoning packets ages ago. Once I started mixing up my own, there was just no going back. This homemade taco seasoning is so simple, way more affordable, and the best part? I can tweak it to fit our taste buds. Which, let’s be real, most of us are not built for spicy food.

I love that the savings add up too. Overall, this homemade version costs just a fraction of what you'd spend on the packaged kind.

I like to make a small jar each time and keep it in the pantry so we’re always ready when a taco craving hits (which is often). It’s perfect for ground meat, chicken, or even veggies if we’re going the meatless route. And yes, I’ve totally used it on roasted potatoes and in soups too—it's that good.

Why I Love This Homemade Taco Seasoning:

Ingredients
  • 4 Tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 tsp crushed red pepper flakes optional
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • 6 teaspoons ground cumin
  • 2 teaspoons salt more or less to taste
  • 4 teaspoons black pepper more or less to taste
Instructions
  1. Mix all ingredients in a bowl.
  2. Add to a spice jar or small mason jar.

  3. Add 2 to 3 tablespoons of this mixture plus 1/2 to 3/4 cup of water to one pound of cooked meat.

Ingredients:

● 3 Tablespoons Ground Cinnamon
● 3 Tablespoons Ground Ginger
● 2 Tablespoons Ground Cardamom
● 1 Teaspoon Fine Ground Pepper

Directions:

  1. Combine all ingredients in a bowl and whisk until fully combined.

Cold Chai Latte Directions:

● 8 Ounces Cold Milk
● 1 Tablespoon Honey (or other sweetener)

Place all ingredients in a blender and blend for 20 seconds. Pour into a cup and enjoy.

Hot Chai Tea Latte Directions:

● 1 ½ Teaspoons Chai Spice Mix
● 4 Ounces Milk
● 4 Ounces Hot Black Tea
● 1 Tablespoon Honey (or other sweetener)

Warm ingredients slowly in a pan over the stove. Once heated through, pour through a cheesecloth, if desired, and enjoy. To skip the stove, warm the milk and add all the ingredients to a blender and serve.

Tips:

● If you prefer one spice more over another, you can adjust the spice amounts to match your preferences.
● If you make the drink recipes, be sure to adjust the amount of spice mix and sweetener to suit your tastes.
● This tastes better the longer the spices get to sit in the liquid. The flavors truly shine their best if you blend or heat them over a stove when preparing.
● You can use one of those little handheld milk frothers in place of a blender as well, although I still find that the blender is still a bit better at it.
● You can make this recipe from whole spices and get an even more robust flavor out of it.

Ingredients

  • 1/4 cup baking powder
  • 2 Tbsp sugar

Instructions
  1. In a large bowl mix together the flour, baking powder, sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Store in an airtight container for up to 4 weeks or in the freezer for up to 6 months.
Recipe Notes

To make this a whole wheat version: Replace 3 cups all-purpose flour with 3 cups whole wheat flour and add 2 more tablespoons of baking powder.

To make a gluten-free version you can use a 1 to 1 gluten-free flour in place of regular flour.
