Baking banana bread and muffins ahead of time and freezing is great for last minute guests or a time saver when you have overnight guests.
A can of cannellini beans or garbanzo beans with a little spice and garlic and olive oil makes a fast 1-2 minute hummus or bean dip to serve with crostini or crackers. Even frozen peas with mint, olive oil and garlic and salt will make a pea purée for crostini. All make great quick and inexpensive appetizers.

Thank you! I needed this encouragement. I always use what I have on hand. I usually make a simple soup and a loaf of homemade bread. It's really inexpensive and doesn't keep you in the kitchen cooking the whole time. I've been working on keeping our home in order just in case we get unexpected guests. Thank you again for more frugal ideas. 😁
