Banana Chocolate Chip Muffins
Years ago, I spent a summer working in Banff, Alberta.Β Quite often, on my way to work, I would stop in at a local coffee shop called Evelyn’s and pick up one of their Banana Chocolate Chip Muffins.Β They were delicious!Β Once I returned home that fall, I was on the hunt for a recipe that would compare.Β I found one that even boasted the title of being Evelyn’s Banana Chocolate Chip Muffins!Β For the life of me I can’t remember where I found the recipe, since that was about 10 years ago!
Are you ready for the recipe?Β Here is my recipe adaptation:
Banana Chocolate Chip Muffins
Servings: 12 muffins
Ingredients
- 1 1/2 cups flour
- 2/3 cup sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup mashed ripe bananas about 2 bananas
- 1 large egg
- 1 tsp vanilla
- 1/2 cup unsalted butter melted
- 1/4 cup milk
- 3/4 cup chocolate chips I use less!
Instructions

Preheat the oven to 350Β° Fahrenheit. Line a muffin tin with 12 muffin liners.

Mix flour, sugar, baking powder and salt in a large bowl.

Mix mashed bananas, egg, vanilla, melted butter, and milk in a medium bowl.

Stir banana mixture into dry ingredients until just blended. Stir in the chocolate chips.

Distribute the muffin mixture evenly into the 12 muffin liners. Bake for about 32 minutes or until the tops are golden brown.

I stumbled across this recipe last year. I too spent a year or so in Banff and Evelyn’s was frequented often. I made these muffins for my children and in Evelny’s style, made them hot chocolate with chocolate whipped cream.

What can I use in place of butter or margarine?
While I’m not sure of the results, you could try Coconut oil or apple sauce. Hope that helps. Let me know how they turn out if you try!

I have been meaning to post a comment on these muffins for awhile now. I have been making these muffins for 3 years now and they are soooooo good. I have not made them in a regular muffin pan as of yet. I always make them as mini muffins and everyone gobbles them up. My family and coworkers can’t stop eating them. One of my coworkers calls them “crack muffins” because she is so addicted to them????. My youngest daughter and her friends can’t get enough of them either. Every time she comes home for a break (college ) she ask if I’m going to make the mini banana chocolate chip muffins. Good thing I always keep over ripe bananas in the freezer. I thank you so much for the recipe 5 stars for sure.

I made a healthier version with sucralose (Splenda) and I replaced butter with 1/4 margarine and 1/4 apple sauce!!! I switchef the chocolate chip with FRESH blueberry (less juicy) and they turned out AMAZING! So moist and tasty! xxxxx

These muffins are amazing! I used margarine instead of butter and brown sugar in place of the white sugar. They turned out great!
Tip:
Try using a silicone muffin pan for an easy clean up!

I just made these but didn’t have 2 bananas, so i used one and a half cup of frozen blueberries π added a brown sugar-walnut topping as well… delish!!

Thank you for this wonderful recipe. I made them this evening and they are almost gone. Should have doubled the recipe. I made small adjustments adding a pinch of nutmeg and cinnamon. Delicious.
I didn’t have butter so replaced it with 1/4 c melted margerine (olive oil Becel) and 1/4 c apple sauce.

Great recipe!! I added 1/4 cup of ground flax seed for a little more fiber benefit and cinnamon…fantastic. I also used splenda instead of the white sugar, will try 1/2 brown sugar next time.
I just made these after seeing the recipe this morning. They are fantastic! Light and fluffy π I also had to make some w/o chocolate chips for my husband… I added a touch of nutmeg and cinnamon for some extra flavor. Thanks for the recipe π
Wow they were so so so so good my dad came up to me well i was baking and he said to make some with out so chips and they were sososososososososs GOOD and i added the 1 tsp vanilla and i was so good to and in my oven it only took 10 min. to cook π thanks, π

I tried this recipe using 3 bananas that I had frozen. I also divided the sugar using 50% white and 50% light brown. They were fantastic!! I have wrapped the leftovers individually and put them in the freezer…now I have a great (and quick) snack opton for down the road.

Made these today with some mashed bananas that I had frozen. SO delicious! Super quick and easy! VERY moist and flavourful! I’m glad I found this recipe! I added a dash of cinnamon even though I’m not a huge fan of cinnamon it does wonders in this recipe and makes them smell AMAZING! I couldn’t even wait for the muffins to cool down and I was already digging in.. which was even better because the chocolate chips were still warm and melty mmm! These muffins are AWESOME. The usual muffin recipes I make always seem so dense but not these I will be making these many more times.
just made these – and boy are they tasty. Recipe was perfect. I changed it slightly to use 1/3 cup of light brown sugar and 1/3 cup white. I may try substituting Splenda Blend next time! I also added Vanilla & White choc chips as well as milk choc chips.

These muffins are UNREAL! I make them all the time and they are absolutely delicious and so moist! I also add a little bit of cinnamon and vanilla and it really brings out the flavours! Thanks for the recipe π

Absolutely the best muffins EVER. My kids just love them and I can’t seem to make the bananas rippen fast enough to satify their demand for them. Thanks for the recipe. PS I only cook them for 26 mins and they are done to pefection.

Mmm…I had coffee & muffin at Evelyn’s 12 years ago, when I was there on my honeymoon. π Of course, that was before having to eat gluten free. I may have to try to convert this recipe, looks great!
