Chocolate Peppermint Fudge

Now here’s a Christmas fudge recipe that will be great for gift giving!  I think it would pair nicely with this Homemade Peppermint Bark!

I’m afraid I’m getting a reputation for only making easy things, but really, if you have to add extra things to your already full calendar, why spend a lot of time creating?  It’s the thought that counts, right?  Anyways, this recipe is so easy, it only calls for four ingredients. That, my friends, is how you impress on a budget and use minimal effort and time. 🙂

Chocolate Peppermint Fudge

Chocolate Peppermint Fudge
Ingredients
  • 2 packages of 12 oz. Wilton dark chocolate candy melts
  • 1 tsp peppermint extract
  • 1 ½ Cans of sweetened condensed milk 14 oz cans
  • 6 candy canes crushed
Instructions
  1. Spray an 8x8 or 9x9 baking dish with non-stick cooking spray.
  2. Pour the candy melts and the sweetened condensed milk into a large microwave safe dish. Add in the 1 tsp of peppermint extract.
  3. Heat in the microwave for 1 minute and stir. Heat for another minute and stir again, heat again in 20 second increments stirring if not completely melted.
  4. Immediately pour the melted mixture into the baking dish and sprinkle with the crushed candy canes (see photo).
  5. Allow the chocolate to cool at room temperature. Once it is cool, place the baking dish in the fridge (covered) to allow the fudge to completely set.
  6. Cut into 12 large squares or 24 mini squares.

Simple and quick homemade peppermint bark! Makes a great gift!

One of my favourite things to give as gifts is homemade edible goods.  In my mind, it’s the perfect little something.  It’s a treat as well as a gift that won’t take up room in the recipient’s home!

Today’ I’d like to share this recipe for Peppermint Bark.  Not only do I love it because it’s tasty, it’s really simple to make!

Peppermint Bark
Ingredients
  • 270 g bag Milk Chocolate Baking Chips
  • 225 g bag White Baking Chips
  • 1/2 tsp Peppermint Extract
  • 12 Candy Canes
Instructions
  1. Place the Candy Canes in a Food Processor and crush or place them in a Ziploc bag and crush with a rolling pin.
  2. Line a pan with parchment paper.
  3. Melt milk chocolate chips in the microwave by heating at 50% for 1 minute and stirring until smooth.
  4. Pour melted milk chocolate chips into the pan and level.
  5. Place in refrigerator for 20 minutes.
  6. Melt White Chocolate chips in microwave by heating at 50% for 1 minute and stirring until smooth.
  7. Add peppermint extract to the white chocolate chips, stir.
  8. Pour melted white chocolate chips into the pan on top of the milk chocolate and level.
  9. Sprinkle crushed peppermint over the white chocolate.
  10. Place in refrigerator for 20 minutes.
  11. Break apart into pieces and put the pieces into gift bags for gift giving!

Peppermint Brownie Jar. Those three words bring joy to my ears. 🙂

There’s no chocolate that I love more than After Eight wafers around Christmas time.  And well, a brownie will do just about any time of the year. So, in my eyes, there’s nothing quite like this homemade Christmas gift idea: peppermint brownie jar!  It makes the most wonderful hostess gift or it’s perfect for that person on your list that likes consumable (no clutter) gifts.

Here is how to create the Peppermint Brownie jar:

Peppermint Brownie Jar
Ingredients
  • 2 cups sugar
  • 1 cup flour
  • 2/3 cup cocoa powder
  • ½ tsp salt
  • ½ tsp baking powder
  • ½ package of mint flavoured chocolate chips
  • 6 crushed up candy canes
  • 1 32 oz. wide mouth mason jar with lid
Instructions
  1. Combine all the dry brownies ingredients: sugar, flour, cocoa powder, salt and baking powder. Mix well and our into the wide mouth mason jar.
  2. Tap the jar on the counter a few times for the mix to settle and then pour the chocolate chips and candy cane pieces on top.
  3. Close the jar decorate with ribbon or twine if you wish.
Enclose these directions for baking:
  1. Pour the contents of the jar into a large bowl. Add 2 eggs and ½ a cup of vegetable oil.
  2. Grease a 9x13 pan and pour the batter in.
  3. Bake for 25-30 minutes.

This recipe is my husband’s personal favorite. He loves hot fudge sauce!  He’s even convinced me on several occasions to get hot fudge instead of my usual caramel when we stop at Dairy Queen or McDonald’s for an ice cream treat.

This hot fudge sauce is so easy to whip together and once you make, you will never go back to store bought!  You can use it immediately or store it in the fridge until you are ready to use it. (Heat it in the microwave before serving).

Here’s how to make homemade hot fudge sauce:

Ingredients
  • 3/4 cup Semi-Sweet Chocolate Chips
  • 3/4 cup Sugar
  • 1/8 tsp Salt
  • 1 tbsp Butter
  • 1 cup Heavy Cream
  • 1/2 tsp Vanilla
Instructions
  1. Melt chocolate chips by heating them in the microwave for 30 seconds then stirring and microwaving again until chocolate is melted.
  2. Transfer to a sauce pan over low heat and add butter, salt and sugar.
  3. Add cream in small amounts until desired consistency is reached.
  4. Stir frequently until heated, but not boiling.
  5. Remove from heat and add vanilla.

Fall M&M Monster Cookies

I was in a cookie rut. Whenever my daughter and I make cookies, it always seems to be Peanut Butter Cookies. Don’t get me wrong, peanut butter cookies are delicious (and my husband’s favourite), but sometimes I want something a little different!

So, enter Fall M&M Monster Cookies! They’re easy to put together and delicious so they’re sure to please! And they still include peanut butter, so my husband is on board. 🙂 These Fall M&M Monster Cookies have everything. Peanut butter, oatmeal, chocolate chips and M&M’s, make for my FAVORITE Cookie!

Fall M&M Monster Cookies

INGREDIENTS 

  • 1 1/2 Cup peanut butter, smooth or chunky
  • 1 Cup sugar
  • 1 Cup brown sugar, packed
  • 1/2 Cup butter, softened to room temperature
  • 3 eggs
  • 1 tsp vanilla
  • 4 1/2 Cups oatmeal
  • 2 tsp baking soda
  • 1 Cup chocolate chips
  • 1 Cup Fall colored M&M’s (red, yellow and brown) + extra to press on top of the cookies prior to baking

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Combine the peanut butter, sugar, brown sugar, butter, vanilla, baking soda and eggs.
  3. Add in the oatmeal one cup at a time, stirring well.
  4. Add in the 1 cup of chocolate chips and the 1 cup of Fall M&M’s.
  5. Drop by rounded tablespoon onto your baking sheets about 2-3″ a part. Press a few extra M&M’s into the tops of each cookie.
  6. Bake for 9-13 minutes. Do not overbake. Cookies will be slightly soft when you remove them from the oven but will set as they cool.

*Makes approximately 3 dozen cookies.
