Vegetable Chowder Soup

Ingredients

cup
chopped onion
1/4
cup
butter
1
cup
each of diced potato
celery, cauliflower, carrot and broccoli

cups
chicken or vegetable broth
1
tsp
salt
1/4
tsp
pepper
1/2
cup
all-purpose flour
2
cups
milk
1
Tbsp
minced parsley
2
cups
shredded cheddar cheese
optional
Instructions
Saute the onions in the butter until soft.
Add vegetables, chicken broth, salt and pepper.
Bring to a boil, and reduce heat.
Cover and simmer for 20 minutes or until vegetables are tender.
Combine flour and milk until smooth in a medium bowl.
Stir into pan with the vegetables.
Bring to a boil and cook and stir for 2 minutes.
Add parsley.
Just before serving, stir in cheese.
