This week is going to be so easy when it comes to meals! I’m heading out of town on Thursday and will be returning sometime on Monday, so I’ve only got three dinners to look after! I’ll make sure to make enough for leftovers so my husband will have something decent to eat! Here goes:
Monday: Leftover pizza and Cauliflower & Cheddar soup (great combination…)
Tuesday: BBQ Beef in the slow cooker(I’ll be using cheap steaks instead of roast to clean out my freezer), mashed potatoes, steamed veggies
Wednesday: Chicken & Brocoli Pie, carrot sticks

looks good. have a nice trip. I have a few ideas written down for this week. Tonight is cabbage roll casserole I did with brown rice and ground turkey for more health benefit. I am going to try turkey burgers with corn salsa and provolone cheese, making some fresh cod fish burgers (no batter). I decided no beef on the menu anymore..trying to kick the beef and replace it with fish. For Meatless Monday it was to be lasagna roll ups but I made so much cabbage roll bake yesterday it is leftovers. Will do meatless one day this week. Thanks to you posting the Spud offer I have my order arriving later this week and one item is beets so going to make beet soup (borscht) and freeze some servings as I am sure the cold days are still ahead. 🙂
