
Welcome to the second week of the Eating from The Pantry & Freezer Challenge! Here’s what it’s all about or you can read the post from Week 1.
Here’s my update:
As it seems with all my weeks, not every meal I had planned got made. Things just come up or we have more leftovers than we thought!
But I did manage to rid our freezer of a few things! Some taco meat is gone, a couple of bags of frozen fruit are gone, along with quite a few frozen bananas.
Here’s what we’ll be eating this week:
Monday:
- Breakfast: Banana Muffins, yogurt, fruit
- Lunch: Egg Salad sandwich
- Dinner: Ham, mashed potatoes, corn (didn’t get made last week)
Tuesday:
- Breakfast: Scrambled eggs with yogurt
- Lunch: Potato soup using leftover ham?
- Dinner: Cheesy Beef & Rice
Wednesday:
- Breakfast: Refrigerator Oatmeal
- Lunch: Potato soup using leftover ham?
- Dinner: Baked Ravioli
Thursday:
- Breakfast: Banana muffins, yogurt, fruit
- Lunch: leftovers
- Dinner: Leftovers
Friday:
- Breakfast: Refrigerator oatmeal
- Lunch: Smoothies
- Dinner: We will have family in town so maybe a BBQ but I’m not setting anything in stone
Saturday:
- Brunch: French Toast
- Dinner: We will have family in town so I’m not setting anything in stone
Sunday:
- Breakfast: Oatmeal/cereal, yogurt, fruit
- Lunch: Egg salad sandwich
- Dinner: We will have family in town so I’m not setting anything in stone

Most of our meals were made from last weeks menu. Did make some extra and froze them for next meals. As for my grocery bill, I find it hard to stick to a budget, (went over $25!) because if I find something on sale which I know I will use, I get it. But here is my menu for the coming week…
Breakfast:
– Quinoa Breakfast Porridge
– Overnight Steel Cut Oats
– Pineapple Banana Green Smoothie
– Raw Apple Strudel
– Carrot Cake Steel Cut Oats
– Overnight Oatmeal
Lunch:
– Green Tossed Salad
– Orange & Banana Green Smoothie
– Green Salad
– Leek & Potato Soup (Freezer)
– Quinoa Salad
– Sandwiches
Dinner:
– Leftover Sunday BBQ
– Healthy Rice-a-Roni
– Freezer Dinner
– Free pickings
– Salmon with leftover Rice-a-Roni
– Pizza
– Burgers
Snacks:
– Fruit, veggies, nuts, muffins, ants on a log, homemade eatmore bars and lots of water!
Wow you did really well with your grocery bill. I took your advice & used up some food I had in the freezer & canned stuff in my cupboards so managed to save a bit, but I can’t image a $21 bill – that’s amazing!
I am so onboard for this as well. It needs to be done, thanks for the blog, I love it!
