I thought it was high time I started getting back into menu planning after a bit of a hiatus. We’ve been eating through our freezer meals and have been fed very well by family members! I’m feeling well enough, after the arrival of our little girl, to get some more interesting meals on the dinner table!
Here’s what I have in mind:
- Chicken Quesadillas
- Cheesy Beef & Rice, salad
- Chicken Souvlaki, Greek Potatoes, Caesar salad
- Stir-Fried Beef & Green Beans, rice
I’d also like to try making these chewy granola bars for some easy snacking.
Do you find, after taking a break from menu planning, that you’re more inspired and excited to actually cook? I’m finding that to be the case!

I would think twice before making the chewy granola bars. I tried this recipe and they are so sweet it is unbearable. I have a serious sweet tooth but no one in my family liked these at all. I bake alot so it isn’t that I am a rookie. Expensive to make especially withthe cocnut oil and really dissapointing.
