
This week’s Menu Plan: November 14 – 20, 2016:
Breakfasts:
- Eggs and toast
- Peanut butter toast and apples
- Waffles/cereal
Lunches:
- Leftovers
- Quesadillas and beans
- Grilled Cheese sandwiches
Dinner:
- One Pan Chicken Dinner
- Homemade Pizza Pockets, veggies
- Chicken Caesar salad
- Pulled pork buns or beef dip (anyone have a good, easy recipe for either of these??)
- Bacon and eggs, fruit
- Dinner at my parents

Crockpot Pulled Pork
• 7-20 minutes to prepare – Crockpot time varies
• Serves 10
Ingredients

• 4 lbs of pork roast (shoulder or butt are good)
• 2 large onions
• 1 c. of ginger ale (apple juice) (beer!)
• 1 (18 ounce) bottle of your favorite barbecue sauce
How to make it

• First you want to slice one onion and place in crock pot.
• Then put in the roast and cover with the other onion, sliced.
• Add in the ginger ale (apple juice)(beer).
• Cover with lid and this cook on LOW for about approx. 12 hours.
• Remove the meat, strain and save the onions getting rid of all liquid.
• Then with your hands or 2 forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away.
• Next return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for approx. 6 hours on LOW.
• You can serve with hamburger buns or rolls and additional barbecue sauce. This freezes well.
• (This can be made the night before, pulled apart in the morning and returned to crock pot mid afternoon to heat thoroughly).
