I definitely feel more under control this week. With the giveaways wrapping up this week, I’ve had time to plan a menu! I’m also pretty excited that I feel like I have more time to devote to dinner making, now that I’m finished work at the golf course! I hope there will be less one dish meals, mainly for my husband’s sake.
I’d also like to somewhat start writing down lunch ideas. I’m terrible when it comes to lunch, I’m quite happy with snacking. Unfortunately, this method usually doesn’t make me full and I really need to give the baby proper meals 🙂
Here’s what I’ve got in mind for this week:
Lunches:
- dinner leftovers
- Tuna pasta salad (except I’m going to use chicken as that’s what I have on hand)
- Egg Salad bunwiches
- Broccoli & Cheddar soup
Dinners:
- Out for my husband’s birthday
- Chicken Pesto Pasta with bacon
- Sweet & Sour Chicken, rice, steamed veggies
- BBQ sauce meatballs in the slow-cooker, rice, veggies
- Sunshine ham (recipe coming), mashed potatoes, salad, veggies

What are you eating this week at your home?

I am baking up a chicken and with the leftovers i have found if you mix mayo, onion, red pepper, mozza and a couple of table spoons of pesto, you end up with a panini mix that tastes just like Booster Juice’s Chicken Pesto Panini. With the leftover chicken remains am making up a chicken soup. I also usually save a cup of diced chicken for a spinach and chicken quiche (covered in leftover panini mozza) We just love chicken in our house,–its so versatile.
this week I made a big slow cooker pot of baked beans and fresh bread in my bread maker. I say let the machines do the work. We eat the beans for lunch with bread and salad. Froze 6 meals of beans. Tonight my slow cooker will be working all night making chicken broth which I will de-fat and make gravy for my turkey dinner on Thursday as well as some soup. Today Dash’s Market in Buffalo had 2 for 1 sushi. For $6.30 we got 18 pieces of sushi, ginger, wasabi soy sauce and chopsticks.. It was a very good day for this frugal gourmet! My turkey will provide lot’s of leftovers. Can’t wait to plan the meals; Turkey Tetrazinni, BLTT Club Sandwiches, Cobb salad….and of course, more broth. The possibilities are endless. Last week I bought 10 lbs each of beets, carrots and onions. I cooked up the beets and froze them. They are amazing! When you fry them in a little butter till crispy and slightly caramelized and then squeeze on some fresh orange juice and grate a little zest it makes an excellent side dish and you cannot even tell that they were frozen. I may combine them with a little chevre (goat’s cheese) next time. I have heard that they go well together. I luv this FB page. I sent away for the Red Rose tea coupon. It arrived in 3 days when I was down to my last tea bag. I got 2) 72 bag boxes for $2.99 at No Frills. I have requested more coupons. Thank you for sharing the deals. It really helps to keep the food budget under control.

My mom used to make tuna salad in half an avocado for my school lunch’s. YUM, I still eat it like that now & I love avocado’s!
