Time for another menu! At least until the end of June, we’ll be having quite a few really simple meals because my husband is playing soccer three nights a week. His games start quite early too, so dinners need to be quick to make and quick to eat! I’d love to hear your suggestions for meals during times like this!
Here’s what I’ve got in mind for dinners this week:
- Bean dip (refried beans, salsa, cream cheese and cheddar cheese), fruit smoothie
- Tortellini (using a coupon for a free package!) with Rose sauce, salad
- Chicken Tacos
- Hashay (beef cooked to death in gravy served over mashed potatoes and carrots, a childhood favourite!)
- Lasagna (in the freezer)

As there is only 2 of us in the house, we tend to cook a meal that will last us for at least 2 days. Here is what we will be eating this week… Monday – Lentil Loaf (Meatless Monday); Tuesday – Roast Potato with Turkey sausage; Wednesday – Leftover Sunday Steaktodeath Dinner; Thursday – Leftover Tuesday dinner; and Friday we will do a fish meal. Saturday out to eat!
Making enough for 2 meals will also give us the option of freezing 1/2 of it for another time, as on occassion, we have had to do this because something might come up! Those are bonus meals for us!
I have never heard of Hashay before?

We have tried to reduce our purchase of meat and it is working out really well. Our budget is down to approx $50 / week for the 3 of us.
We are now able to spend more money on our favorite organic products and make more products from scratch.
