I thought I would post my recipe for the Black Bean burritos that my husband and I have been enjoying lately! Keep in mind that I’m a big fan of simple, so they’re nothing fancy. But the result is actually quite delicious! Also, the ingredient amounts I have listed are what I use for the two of us. (makes about 4 burritos) Adjust accordingly for your family.

Easy and Inexpensive Black Bean and Salsa Burritos
Ingredients
- 4 Tortilla shells
- 2 eggs
- 1/2 can black beans
- 1/2 a green pepper chopped
- 1/2 can whole kernel corn
- salsa I think I used a bit more then 1/2 cup, not entirely sure
- shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees
- Scramble the eggs in a large pan with the green pepper
- Add the corn and black beans to the eggs
- Saute everything for a bit
- Add the salsa, heat through
- Place the bean and egg mixture in the center of the tortilla shells. And add shredded cheddar cheese
- Wrap the filled tortilla shells burrito style
- Place in heated oven for about 5 minutes
- Enjoy!
