Hello again! I think the summer heat has gotten to me because I sure don’t feel like cooking these days! But I must… If only we could shut our eating systems down for days like these!
Last week’s menu highlight was the BBQ Pork Satay, it was delicious and cooked to perfection by my husband! (I used this recipe since I couldn’t find the one I thought I had on hand.)
Now, here’s this week’s menu:
Monday: Chicken Peanut Pasta
Tuesday: Teriyaki & Ginger Pork Chops (in the crockpot), corn on the cob, salad
Wednesday: leftovers or something very easy
Thursday: Meatballs (sweet & sour?), rice, roasted potatoes
Friday: Beef Fajitas (didn’t have last week)

We had bread crumb crusted fish tonight with corn on the cob. We bought the corn at the local Vons and it was just awesome.
