Here’s update #1 on my baking day! (finally!) So far I’ve made the banana bread, banana muffins, and the granola bars. Just the cookies are left. Below are the pictures and recipes.

Banana Muffins:

1 1/2 cups flour
2/3 cups sugar
1 1/2 tsp baking powder
1/4 tsp salt
1 cup mashed ripe bananas (about 2 bananas)
1 egg
1/2 cup unsalted butter, melted
1/4 cup milk
3/4 chocolate chips (I use less)

Preheat oven to 350 degrees. Line 12 muffin cups with muffin liners. Mix flour, sugar, baking powder, and salt in a large bowl. Mix mashed bananas, egg, melted butter, and milk in a medium bowl. Stir banana mixture into dry ingredients just until blended. Stir in chocolate chips. Fill each cup about 3/4 full. Bake for about 32 minutes or until tops are golden brown.

I used honey instead of corn syrup. 1/4 cup each of coconut and sunflower seeds


Banana Bread:
2 large bananas
2 cups flour (I used 1 cup all purpose and 1 cup whole wheat flour)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter
1 1/2 cups sugar (I use less!)
2 eggs
1 tsp vanilla
1/4 cup butter milk or sour milk (for sour milk: 1/2 tsp vinegar added to milk to equal 1/4 cup)
Preheat oven to 350 degrees. Put all ingredients in a bowl in exactly the same order as they are written. Mix them with a mix master. (or using a bit of elbow grease!)
Makes a 9×13 pan or 2 bread pans
Cake pan: 30-35 minutes
Bread pans: 45-50 minutes
