Menu Plan Monday – Week of September 6, 2010

Although I’m pretty sad that summer is on it’s way out, I’m excited for all that fall brings.  Fresh apples, plum cake (my Dad makes the best!), cooler temperatures, brisk walks, and cozying up with a hot drink.  Oh, and I can’t forget my pumpkin spice candle and the changing leaves!  What are you most looking forward to about fall?

Speaking of fall, my meals are starting to turn towards more comfort food or the warm you up from the inside kind of meals.  Here’s what I’ve got planned:

Monday:  Black Bean & Corn Quesadillas
Tuesday:  Sweet & Sour Meatballs, potatoes, steamed veggies
Wednesday:  Chicken Lazone over rice, veggies (or out, since it’s our third anniversary!)
Thursday:  Baked Ziti, garlic bread, salad (carried over)
Friday:  Cheddar Ranch Burgers, Ranch potato wedges, fresh veggies (carried over)

Menu Plan Monday – Week of August 30, 2010

My husband was away longer than expected last week, so a few meals didn’t get made since I thought that would be wasting a lot of food!  There was no way I could eat that much on my own!  But I decided to carry over only one meal since the others lost their appeal for this week!

Here’s what I’ve got in mind for dinners this week:

Monday:  Shredded Beef  Tacos with all the normal taco fixings (carried over again)
Tuesday:  Cream Cheese Chicken in the crock pot, rice, veggies
Wednesday:  Cheddar Ranch Burgers, potatoes, veggies
Thursday:  Baked Ziti, garlic break, salad
Friday:  Chicken Caesar Pitas

So, I’m having big urges to freeze and can everything I possibly can.  So far?  I’ve got my peaches frozen.  I think I’m a bit more ambitious in my mind then I am in actuality.  But I really do intend on canning some dill pickles and possibly creating a frozen berry mix with blueberries, raspberries, blackberries and strawberries.  Those little bags from the frozen section of the grocery store sure add up!

I think I have this week’s menu all figured out.  I do have a couple of carry overs from last week though!  Here’s what I’ve got planned:

Monday:  Greek Salad (I’m on my own and I really want a huge bowl of Greek salad! It’s not one of my husbands favourites!)
Tuesday:  BBQ Beef (carried over), potatoes, veggies
Wednesday:  Chicken Lazone over whole wheat pasta, raw veggies
Thursday:  Kabobs on the BBQ (carried over), pasta salad, grilled veggies
Friday:  Tacos with Shredded beef

I’m going to be quick with this week’s menu, my husband and I are headed on a day trip today to enjoy some of our surrounding cities!  I’m pretty excited!  So let’s get on with the menu shall we?

Monday:  We’re out of town!
Tuesday: Bourbon Chicken, brown rice, veggies
Wednesday:  Pesto Pizza with Chicken and Pepperoni, salad
Thursday:  BBQ’d Kabobs, tossed salad, pasta salad (I’ll be making a smaller amount of one of them)
Friday:  BBQ Beef, mashed potatoes, veggies

There!  I think that should be okay!  As usual, if you would like to peek in at what others are eating for the week, visit I’m an Organizing Junkie!

Menu Plan Monday – Week of August 9, 2010

Well, I’m still in the mood for simple summer meals, as this summer has been nothing but go go go!  But at least it’s been mostly fun stuff! 🙂  I don’t have much to say this week so why not get going on the menu right away!  Here you go:

Monday:  Chicken Quesadillas (carried over)
Tuesday:  Sweet & Sour Meatballs, brown rice, veggies
Wednesday:  BBQ Chicken pasta
Thursday:  Perogies and Sausage, tossed salad
Friday:  Out to eat!

Menu Plan Monday – Week of July 26, 2010

Whew!  Summer sure has hit full force!  The heat is wonderful!  Last week I learned a menu planning lesson…don’t add any meals to the plan that require turning the oven on!  When it came time for me to make my oven meals, I really did not want to heat up the house unnecessarily, so I improvised!  Me, the recipe follower, actually made up a meal!  And it was good!   It was a tortellini dish with sauteed veggies and a light cream sauce!  Yum!  Needless to say, I think I came up with a decent summer menu for this week.  Here goes:

Monday:     Greek Chicken (crock-pot), Greek Salad, Couscous salad
Tuesday:   California Grilled Veggie  Sandwich (carried over)
Wednesday:  Sloppy Joes on buns, salad
Thursday:  Summer Rolls with peanut dipping sauce
Friday:  Chicken Caesar Wraps

There!  I don’t have to use the oven once!  Just how I want it.  If you would like to see what others are eating this week, visit I’m an Organizing Junkie!
