There is a recipe that I use regularly for mushrooms that is cheap, easy and very tasty. I like it because it’s pretty much idiot-proof and can be altered depending on how many or how few mushrooms you have or would like to make.
Marinaded Mushrooms
1 cup whole, cleaned mushrooms (can be more or less,depending on what you want to do)
3/4 cup Italian dressing, any brand
1/4 cup water
Place mushrooms and dressing/water mix in a pot. Liquid should only just cover the mushrooms. Note:if you don’t have/like Italian dressing, feel free to substitute it with a sweet pickle brine that you may prefer.
Bring pot to a low boil and simmer for about 20 min or until mushrooms are cooked. Remove pot from stove and allow to stand and cool. Place all the contents of the pot in a jar or storage container with a lid and allow to steep overnight. They can be eaten as soon as they’re cool, but I find that the taste is much better the next day.
