I find onions will sprout really fast this time of year. I always buy the 10 lb bags on sale, but if they start to go soft I chop them up and freeze them in meal-sized portions (they don’t need blanching). If you’ve got a lot of onions to chop, a food processor comes in handy 🙂 The frozen onions will work just fine in cooked dishes but are not great for using raw. I actually need to do this as I’ve got about 15 lb of onions in my basement that are sprouting away!
