Another week is upon us! And we need to eat. I’m trying some new recipes this week from the latest issue of Simple & Delicious! Here’s our menu:

*BBQ Pork chops, rice, veggies (carried over from last week)
*Greek Chicken (recipe at the bottom), roasted potatoes, Greek salad with this dressing
*Perogy Beef Skillet (Simple & Delicious)
*BBQ pork and penne skillet, using the leftover pork from the other pork chop meal (simple & Delicious)
*Chicken salad sandwiches possibly using homemade buns

Greek Chicken

1/2 cup Mayonnaise
1/4 cup chopped parsley
1/4 cup lemon juice
2 Tbsp chicken bouillon
1 Tbsp oregano
1 1/2 tsp black pepper
2 cloves garlic, minced
3 lbs chicken

Combine all ingredients and pour over chicken. Marinate for about 2 hours. Bake at 400 degrees for approximately 45 minutes.

I’ve also made this recipe in the crock pot and it works well!
