Well hello there! How was your week? The only thing I’ll say about our week is, you don’t know how hard it is to cook with only a bar sized fridge! Forget fresh veggies, we we’re eating frozen corn most of the week because nothing would fit in the little fridge. Luckily our fridge is going to be repaired or replaced on Tuesday…only one more day! As it turns out though, after our fridge caught fire, we researched and found that our particular model had been a part of a major recall back in April. The good news about this is the fact that we get it fixed or replaced for free! (I sure hope it will be replaced as I’ll have a hard time trusting that fridge again!) Going along mostly with what’s in our freezer or pantry, here’s our menu for the week:

Monday: Shepard’s Pie

Tuesday: Baked Lemon pasta with chicken, salad

Wednesday: Beef Vegetable soup

Thursday: Chicken Quesadillas

Friday: Out? Or something super simple.
