
Mini Fruit Pizzas

This version uses pre-made sugar cookie dough, and while I usually lean toward homemade when I can, this is one of those times where convenience wins. Especially if you’re preparing for a party or juggling a busy day. It cuts down on prep time without sacrificing that delicious, soft cookie base everyone loves.
I’ll actually be making these again next month for my daughter’s 2nd birthday party, and I already know they’ll be a hit. It feels like I was just planning her first birthday. Seriously, where does the time go?
How to Make Mini Fruit Pizzas
INGREDIENTS:
- 1 package Sugar Cookie Dough, Pillsbury
- 1/2 cup softened butter
- 8 oz softened cream cheese
- 4 cups powdered sugar
- 1 Tbsp milk
- 1 lb favourite fruits
INSTRUCTIONS:
- Preheat oven to 350 degrees F
- Roll out cookie dough and cut out circles with cookie cutter or drinking glass.
- Place on parchment paper lined baking sheet.
- Bake 10 - 12 minutes or until lightly browned.
- Place on cooling rack to cool.
- Beat butter and cream cheese together in a large bowl until light and fluffy.
- Add in powdered sugar and milk and beat on high until smooth.
- Ice cookies with icing and top with fruit.
- Serve immediately.
