I have quite a few meals that I didn’t make last week because of the holidays and my birthday! Makes this week really easy to plan! Oh, and we’ll be in a nearby city today so I won’t be home to make dinner tonight. Shucks!
Here’s what we’ll be eating this week:
Monday – Out for dinner as we’ll be out of town
Tuesday – Baked Ziti and salad (I have one in the freezer that I prepared a while ago)
Wednesday – Chicken Caesar Pitas
Thursday – Chicken Divan (a new one for us!)
Friday – Grilled Pork Satay, roasted potatoes, steamed veggies (the weather is supposed to finally cooperate!)

How was your Easter weekend? Ours was wonderful! We managed to get in two Easter dinners and a ton of visiting with my sister in law who was visiting for the weekend! The only thing I could have asked for was nicer weather. We had planned to do a bit of hiking but the wind and clouds made it way too cold. Oh well, I was just happy to spend so much time with family!
This week I have to make one less meal because we’re going out for my birthday dinner! Yay for birthdays! But, here’s the rest of what my husband and I will be eating:

It’s menu time again! I started back to my seasonal job on Friday, so now planning a menu has become even more important to me! I’ve got early hours so the less thinking I have to do for dinner each night, the better! Especially the first week back to work. I find I’m really tired, I think it’s all the fresh air I’m not used to getting over the winter!
So, here’s what we’ll be eating this week:
Monday: Sweet & Sour Meatballs (in the freezer), rice, salad
Tuesday: Chicken and Broccoli pie
Wednesday: Beef Stew
Thursday: Grilled Pork Satay, roasted potatoes, steamed veggies
Friday: Cream Cheese Chicken (in the freezer), over pasta, steamed veggies
Another note I forgot to add. During the week, now that I’m back to work, I try to make meals that will give me lots of leftovers so I can take some for lunch the next day. Saves a ton of money!

Here we are, the first week of Spring! We went for a fairly long hike yesterday through one of our provincial parks and it sure was great! The buttercups were in full bloom!
I’ve got a few recipes that are on the menu again this week since I didn’t make them last week. We either had more leftovers then I thought we would or I made something different! I’m still in the process of doubling up some recipes. This week will be the cannelloni and the taco meat. Oh, and now that we’re into Spring, the BBQ is being fired up for the first time this year! Yay!
Here what we’ll be eating:
Monday: Cannelloni, salad
Tuesday: Tacos with all the fixin’s
Wednesday: Pasta Primavera
Thursday: Pork Satay, roasted vegetables, salad
Friday: Cream Cheese Chicken (in the freezer) over rice, veggies

Well, hi there! How was your weekend? Ours was really sunny and beautiful. So nice that I turned down the heat and opened all the windows and patio doors! Oh, and I decided to rearrange the furniture in the bedrooms and the living room. I even managed to gather up a ton of stuff for a garage sale! Since I had the furniture all out of sorts, I vacuumed all the baseboards and got rid of the dust webs that I had been ignoring. I feel like the house can breath again! Never mind the clean feeling that I get in each room! Tomorrow I’m going to tackle the kitchen. Whew!
Anyways, you’re most likely here for our menu! Here it is:
Monday: Teriyaki Chicken and Rice Bake
Tuesday: BBQ Beef, rice, veggies
Wednesday: Pesto Pepperoni Pizza
Thursday: Cannelloni, salad
Friday: Beef Tacos with all the fixin’s
There you go! I’m still making doubles of most recipes so that I can freeze one dish. I’m pretty sure this is going to come in really handy once I’m back to work!

This week I was going to try my hand at doing a months worth of freezer meals but I got totally overwhelmed! I think if I want to try freezer cooking, I’ll have to plan father in advance then two days! But, I’ve come up with about a months worth of meals so I think that when I make a particular dish, I’ll double it then freeze the extra one. That, I think, will work for me this month!
Here’s this weeks menu plan:
Monday: Beans & Rice Taco style (I’ll make extra beans and freeze those)
Tuesday: Samosas, couscous salad (I’ll freeze the extra samosas)
Wednesday: Sweet & Sour Meatballs, mashed potatoes, veggies (I’ll freeze the extra meatballs)
Thursday: Olive Garden Five-Cheese Ziti Al Forno, salad (I’ll make two of these but with less cheese!)
