You know, I just don’t have anything to talk about this week! Well, not much anyways. I’m starting to get antsy about Spring cleaning though as we’ve been having sunny afternoons. The temperature is still to cool to open the windows and that’s the only thing holding me back! I’ll also be starting to freeze some homemade muffins, granola bars, etc this week as I’m anticipating a call to start work fairly soon. It’s nice to have those items frozen so I can just pull them out to snack on while I’m working.
I think I’ve got our menu figured out. There are a couple of meals that are from last week as they didn’t get made. Here’s the menu:
- Monday: Crockpot Cream Cheese Chicken, rice, veggies
- Tuesday: Tender Beef Over Noodles, salad, veggies
- Wednesday: Pork Fried Rice, broccoli, cauliflower and carrot slaw
- Thursday: Grilled Cheese with homemade bread, Tomato Soup (recipe below)
- Friday: Chicken Caesar Wraps, raw veggies
Cream of Tomato Soup:
- 4 Tbsp butter
- 4 Tbsp onion, chopped (optional)
- 6 Tbsp flour
- 4 tsp sugar
- 2 tsp salt
- 1/4 tsp pepper
- Dash garlic, basil, oregano, and thyme
- 4 cups tomato juice or blended canned tomatoes
- 4 cups cold milk
Saute margarine and onion. Blend in flour, sugar, salt, and seasonings. Gradually stir in tomato juice. Bring to a boil, stirring constantly. Boil for 1 minute. Gradually add milk. Heat almost to boiling and serve!

Well, last week’s menu didn’t exactly turn out how I had planned…I called it! I really did try my best but instead of the quesadillas we had more buns. And one night my hubby decided to cook so I was off the hook. Then on Friday, the Salisbury steaks didn’t get made since we headed to my parents to watch the opening ceremonies for the 2010 Olympics! I’m pretty darn proud to say I’m a Canadian these days!
This week though, I’m more hopeful I’ll get to all my planned meals. There are a bunch of new ones I’m trying this week as I just got a new Taste of Home special issue while we were in Phoenix. Yay for new recipes! Alright here we go:
Monday: Sloppy Joe Calzones, salad
Tuesday: Pesto Pepperoni Pizzas
Thursday: Tender Beef Over Noodles (new!), veggies, salad
Friday: Pork Fried Rice (new!) any suggestions on what I should serve this with?

It’s almost a relief to be back into a normal routine after being away for most of January! I’m glad to have menu planning back on my schedule! Although, it was really nice to be away and be rid of my normal routine for a bit!
This week, I’ll be making a few of our favourites that we haven’t had in a while. And there will be a few chicken dishes!
Monday: Slow Cooker BBQ Chicken on buns, veggies and salad
Tuesday: BBQ Chicken Quesadillas using leftover chicken, salad
Wednesday: Chili
Thursday: Chicken and Veggie Pitas
Friday: Salisbury Steaks, veggies, roasted potatoes
There you have it! Although I’m not completely sold on this menu. I may end up changing my mind as the week goes on. Is it just me or does anyone else have troubles getting back into the grove after coming home after a week long vacation? I’ve been putting this menu planning thing off all day!
Our vacation to Mexico was absolutely wonderful. We *had* to go since my sister in law was getting married! Darn! This was the first time we’ve been to an all inclusive resort and apparently we won’t be able to go to anything lesser then a 5 star resort from now on, so everyone says! We sure were spoiled with the service of all the staff and the beautiful scenery. I’m still wondering why I can’t get room service here and miss the endless supply of pina coladas!
Alright, enough bragging about our tropical vacation, onto this week’s menu!
Monday: Lemon pepper chicken salad, croissants
Tuesday: Sweet and Sour Meatballs, rice, veggies
Wednesday: Chicken Pot Pie, salad
Thursday: Leftovers
Friday: Fettucine Alfredo, more salad

Welcome to the New Year! We made it another decade! Wow! So, what do you think this decade will have in store? A lot of yummy menu plans maybe?
I’m sort of drawing a bit of a blank for this week’s menu. I’m trying to use up what we have since we’ll be away next week and I really don’t have much in my pantry or freezer! Shocking! I think it’s because we were out a lot during the holidays and ate elsewhere many times.
So, I’ve tried my best to come up with some meals for this week:
Monday: Sloppy Joe Calzones (in the freezer), salad
Wednesday:
Chili (in the freezer) over pasta
Thursday: Grilled Cheese and Tomato soup
Friday: Out of town!
This grocery bill is going to be great. All I have to buy is some milk, fresh fruit, salad, and Parmesan cheese! Everything else I’ve got on hand!

Hello everyone! How was your Christmas? Ours was fantastic. Lots of food and family! I was spoiled again this year. The most meaningful gift I received this year was one from my Aunt. Since my Grandma passed away in the summer, I wanted to get a copy of her recipes. My Aunt had them and I had been meaning to borrow them from her but I kept forgetting to ask. Christmas day comes and my Aunt hands me a gift. I open it and inside is a recipe box full of my Grandma’s recipes! There are three granddaughters, so my Aunt divided the original recipes three ways and then photocopied the rest so we each have my Grandma’s entire recipe collection! I almost cried.
I guess I’ll carry on with our menu now! I haven’t had to make a complete menu in a long time!
Monday: Sweet & Sour Meatballs, rice, vegetables
Tuesday: Burritos, with Spanish Rice inside
Wednesday: Lemon Chicken Pasta, garlic bread
Thursday: Grilled Cheese and tomato soup
Friday: Orange Ginger pork, mashed potatoes, vegetables
