Hello, hello! Here we are a couple of days into July already! I can hardly believe it!
This week, I thought I’d start something new by telling you all which was our favourite meal of the previous week. How does that sound? Okay, our favourite meal last week was the Sloppy Joe Calzone! Honestly, I was a bit leery to try it, but all the ingredients were ones we like. I so glad we tried it! Delicious!
This week I’m again trying a couple of new recipes out of my new Simple & Delicious magazine so hopefully we can come out with another winner!
Monday: Balsamic Chicken Salad
Tuesday: Chicken or Pork Satay, Salad, potatoes
Wednesday: Spaghetti Penne (we still haven’t had this!)
Thursday: Leftovers
Friday: Pesto Turkey Layered Loaf (pretty much a sandwich)
I’m trying to keep things super simple this week as there are some family matters that are taking precedence over harder to prepare meals. What’s on your menu this week?

Hello! It’s another new week! Again! But summer is here and that means plenty of fresh produce! Hopefully my
container garden will start producing vegetables soon. My tomato plant actually has a whole bunch of tiny green tomatoes on it! I don’t have a lot to chat about this week so lets get on with the menu shall we?
Tuesday: Sloppy Joe Calzones
Wednesday: Leftovers (I might be golfing)
Thursday: Teriyaki Chicken, rice, corn on the cob
Friday: Burgers, salad

Hi again! My computer power cord is up and running again! My Dad came to my rescue and actually fixed the cord so I didn’t have to buy another one! That saved me at least 100 dollars. Last week I decided to write up this week’s menu because I get a bit tired of having to come up with something every week. I think I might start planning two weeks at a time from now on! But I’ll still be posting on a weekly basis.
I must say that the Meatball Souvlaki that we had last week was pretty darn delicious! It was even a hit at work when I took the leftovers for my lunch one day. Lets hope this week has something delicious!
Monday: Garden Chowder (the weather is supposed to be rainy)
Tuesday: Goulash
Wednesday: Pizza from the freezer
Thursday: BBQ Beef in Crock pot, potatoes, steamed veggies
Friday: Spaghetti using penne and chicken instead of ground beef

Well, I must say that last week’s menu didn’t really get done! We did manage to eat the chicken and broccoli pie and the pesto tortellini, but other than that, we didn’t eat anything else planned! One night we decided to grab a bite to eat because my husband wanted to catch the big hockey game and another night I was golfing!
I must say though, that not eating the majority of last weeks meals made it especially easy to plan this week’s menu! Here you go:
* Veggie Chicken Pitas
* Spaghetti using whole wheat Penne, salad (we got a nice big bag of organic salad greens for free at church yesterday!)
* Leftovers (I really need to start adding leftovers into the menu. I do take leftovers for lunch each day, but we still seem to have much left over!)

Well hello again! A part of me wishes each week would not go by so quickly! Sheesh. This week I had a harder time coming up with our menu. I think because I spent all day yesterday working until 9am, driving my husband to the airport, then driving into the nearby city and doing a little bit of shopping, then I convinced myself to get a pedicure (it was the best thing!), then finally I went out for dinner with my parents! As you can imagine, I slept really well last night! I guess I’ve been in a bit of a relaxation mode ever since and I didn’t want to do the menu! But, I did, and here it is:
* Veggie Chicken Pitas
* Meatball Souvlaki (recipe below), Greek couscous salad
* Chicken & Broccoli Pie (still haven’t made this!)
* Pesto Tortellini
Meatball Souvlaki
Servings: 4
1 cup (250 mL) plain low-fat yogurt
1/4 tsp (1 mL) dried
mint2 small tomatoes, chopped
Meatballs:
Preparation:
Meatballs: In bowl, whisk together egg, bread crumbs, mustard, oregano, salt and pepper; mix in beef. Roll by heaping tablespoonfuls (15 mL) into 24 balls; place on greased foil-lined rimmed baking sheet. Bake in 450°F (230°C) oven for 15 minutes or until no longer pink inside.
In bowl, combine yogurt, cucumber, garlic, mint, salt and pepper; spread over pitas. Sprinkle with lettuce. Divide tomatoes, onion then meatballs over half of each pita; fold remaining half over top.
Macaroni Cole Slaw
1 package macaroni
1 package coleslaw mix
2 celery ribs
1 medium cucumber
1 medium green pepper
1 1/2 cups salad dressing
1/3 cup sugar
1/4 cup cider vinegar
1/2 tsp salt
1/4 tsp black pepper
Cook macaroni according to package directions. Mix all ingredients together. Refrigerate. Enjoy!
