Here we are at yet another new week and month! Can anyone tell me where May went? I swear it just started! At least this past week we’ve had the start of our hot weather for the area. I managed to get a bit of a sunburn, oops! My vegetable garden (pots) are really enjoying the weather and have started to grow very nicely! I’m super excited to be able to actually eat something that I’ve grown! Soon enough, my menus will be including my own fresh vegetables. But for now, lets get on with this weeks menu:
Monday: Shepard’s Pie (didn’t make last week)
Tuesday: Grilled pork (or chicken) Satay, vegetable couscous salad, steamed broccoli?
Wednesday: Pesto Pepperoni Pita Pizzas
Thursday: Chicken and Broccoli quiche (didn’t make last week)
Friday: leftovers

Hello everyone! How was your weekend? It was absolutely beautiful here. I managed to sit outside most of the day and just soak up the warmth while I caught up on some magazine reading! Loved it.
This week, I’m determined to not buy much at the grocery store. Not much meaning some milk and lettuce! That’s it! All the meals I have planned are in our freezer or I already have the ingredients on hand. I really just want to use everything up. I’ve been feeling like I’ve been over shopping lately! I’m quite sure that I will only have to buy those two items this week!
So, here’s our eating from our freezer and pantry menu:
Monday: Lasagna (in the freezer)
Tuesday: Lemon Chicken with leftover roasted potatoes and carrots, Yorkshires
Wednesday: Samosas (in the freezer), salad
Thursday: Broccoli and Chicken quiche
Friday: Shepard’s Pie (I’ll freeze the leftovers)
There you go! I have all the meat on hand because I’ve been stocking up when there’s a sale and I’ve got vegetables coming out of my ears!

Hi Everyone! I’m back from my short bloggy vacation! I will admit it was nice not having to post anything for a couple of days but I’m sure glad to be back at it!
I still managed to make up our menu for the week over the weekend! I also was able to try my hand at container gardening. I planted some green beans, carrots, red and green peppers and a tomato plant! (I even did my flower pots!) I still need to get my seed potatoes started. (in a garbage can!) I’m excited to see my seeds and plants progress over the summer. I’ll be sure to give you all some updates!
Enough rambling, here’s our menu:
Monday: Sweet and Sour Meatballs, brown rice, and steamed broccoli and cauliflower
Tuesday: Greek Chicken, Greek salad, pitas with Tzaziki
Wednesday: Cheddar Broccoli soup
Thursday: Chicken Fettuccine Alfredo
Friday: Strawberry Crepes with whipping cream

Hello again! I sure hope all you wonderful Mom’s had and equally wonderful day today! It was beautiful here, so we decided to go on a nice picnic with some bunwhiches, fruit, and some potato salad! It was great!
Anyways, here’s our menu for the week. I’m trying a couple of new recipes so I’m hoping they turn out!
- Monday: We’re heading out of town for the day so we’re eating out!
- Tuesday: Balsamic Almond chicken, steamed broccoli, brown rice (a new recipe!)
- Wednesday: Lemon chicken pitas (carried over from last week)
- Thursday: Teriyaki Beef Kabobs, grilled vegetables, tossed salad
- Friday: Pesto Pepperoni Cheese Pizzas (My recipe below)
Pesto Pepperoni Pizzas
Pita shells (however many you can eat)
Pesto sauce
Tomato Sauce
Pepperoni
Green Pepper
Mozzarella Cheese
Mix some tomato sauce and pesto sauce to your liking. Spread over pitas. Top with pepperoni, green peppers and mozzarella! Bake at 350 degrees until cheese is melted. You can make your own combination of meat and veggies too!

Well hello again! I can’t believe it’s another new week and May already! We’ve been enjoying beautiful weather here for about the past week. I’m sure hoping that continues on into this week!
I think this week I’m going to try to create meals using the stuff I already have in the pantry and freezer! I’ve been feeling the need to do this for a while. As for groceries I’ll just pick up the basics: milk, fresh veggies and fruit, etc…
* Crock pot Cream Cheese Chicken (from the freezer)
* Easy Crescent Samosas
* Easy Chicken and Broccoli Divan
* Barbecue Beef (recipe below)
* Lemon Pepper Chicken pitas (I’m kinda making this up!)
Barbecue Beef:
2 lbs beef stew meat
1 cup ketchup
1/4 cup water
1 package onion soup mix
1/4 cup brown sugar
1 1/2 tsp prepared mustard
1/4 cup vinegar
2 cups celery, diced
Place beef in the bottom of the crock pot. Mix the remaining ingredients in a bowl. Pour over the beef. Cook on low for 6 – 8 hours or high for 4 – 5 hours. Serve over rice or mashed potatoes.

Hi everyone! We’re already into the last week of April! I can’t believe it. I felt like my goal of trying to get more organized last week was successful. I have more meals in the freezer and I generally feel like I’ve got less to do tomorrow in preparation for the rest of the week.
As usual, here are the meals I have planned for the week:
* Beef Fajitas (didn’t get made last week)
* Zippy Calzones (from Simple & Delicious), salad
* Orange Chicken Rice bowl (didn’t get made last week)
* Burgers, pasta salad, veggies & dip
* Shepard’s Pie
