Menu Plan Monday – week of March 16, 2009

Another week! But as each week passes, I’m starting to lose hope that spring is coming. We woke up to more snow this morning. On the plus side, this weather means that my start date at my seasonal job gets pushed up! Yay!

Onto this weeks menu:

*Steak dinner (my mother in law is making us dinner when she comes to town on Tuesday!)
*Chicken Salad bunwiches (didn’t make these last week)
*Teriyaki chicken kabobs, Caesar salad, roasted vegetables (I’ll BBQ the chicken on the night that we have steak)
*Chicken Fettuccine Alfredo, sooo not good health wise! (I’ll grill this chicken as well on the night we have steak)
*Sweet & Sour Meatballs in the crock pot, rice, steamed carrots and broccoli

Menu Plan for the Week of March 9, 2009


Another week is upon us! And we need to eat. I’m trying some new recipes this week from the latest issue of Simple & Delicious! Here’s our menu:

*BBQ Pork chops, rice, veggies (carried over from last week)
*Greek Chicken (recipe at the bottom), roasted potatoes, Greek salad with this dressing
*Perogy Beef Skillet (Simple & Delicious)
*BBQ pork and penne skillet, using the leftover pork from the other pork chop meal (simple & Delicious)
*Chicken salad sandwiches possibly using homemade buns

Greek Chicken

1/2 cup Mayonnaise
1/4 cup chopped parsley
1/4 cup lemon juice
2 Tbsp chicken bouillon
1 Tbsp oregano
1 1/2 tsp black pepper
2 cloves garlic, minced
3 lbs chicken

Combine all ingredients and pour over chicken. Marinate for about 2 hours. Bake at 400 degrees for approximately 45 minutes.

I’ve also made this recipe in the crock pot and it works well!

Menu Plan for the Week of March 2, 2009

Gosh, I have the hardest time planning a menu after getting home from a vacation! I think I should plan the menu before we go away then all I have to do when we get home, is go shopping!

  • Monday: Slow cooker Sesame Chicken, rice, broccoli and carrots Cost: Approximately $4.00 this week as I have all spices, sugar, sauces, rice and carrots on hand.
  • Tuesday: Simply Lasagna (I’m using cottage cheese instead of ricotta cheese) Cost: approximately $5.50 as I only had to buy the mozzarella and cottage cheese.
  • Wednesday: Veggie Chicken Pitas
  • Thursday: leftover lasagna Cost: free! I don’t count leftovers.
  • Friday: Slow cooker BBQ pork chops, mashed potatoes, broccoli, carrots Cost: approximately $4.25 I bought the pork chops, potatoes and broccoli

BBQ Pork chops

Enough pork chops to feed your family (you can also use ribs) Your favourite BBQ sauce (we like Bullseye) Onion, cut into rings

Place onion rings on the bottom of the slow cooker. Place pork on top of the onions. Pour enough BBQ sauce over top the pork to coat every piece. Cover. Cook on low for about 5-6 hours. (My slow cooker cooks hot so I only cook mine for about 4 hours)

Menu Plan for Feb 16 – 19, 2009

Here’s what we’ll be eating this week! I cannot live without doing a weekly menu plan. (well, I’m sure I can, but I don’t want to find out!) It just makes my lfe so much easier! I’ll be going into more detail soon about why I plan our menu and how I do this in seperate posts.

We’re leaving town on Friday so I only planned 4 dinners for this week. My menus are for 2 adults with plenty for lunch leftovers.

Monday: Cream Cheese Chicken, rice, veggies
Tuesday: Waffles (hubby loves breakfast anytime of the day!)
Wednesday: Chicken Caesar pitas, carrot sticks
Thursday: Grilled Cheese and Tomato Soup

Since we’re going away, I wanted to use up what I already have on hand. All I need to buy is some fresh fruits and veggies and some milk!
