Menu Plan for the Week of October 24, 2011

Last week, I had the best week for dinners!  I didn’t have to cook once!  My wonderful sister in law and niece were in town so somehow, we managed not to have to worry about dinners.  One day was her birthday, so we headed to a local restaurant for her free birthday meal, ordered pizza another night, had turkey (belated Thanksgiving) dinner another, I had dinner (free!) at our golf staff tourney on Friday and hubby cooked another!  Spoiled we were.

I did make a menu plan though just in case, so I’ll be using it this week instead!

  • Chili (I’ll post the recipe soon!)
  • Beef Stew in the crockpot
  • Chicken Stirfry over brown rice
  • Pesto Chicken rollups, mashed potatoes, steamed veggies
  • out for dinner

Menu Plan for the Week of October 3, 2011

I’m really enjoying the change in seasons since I feel like I’ve got so many more meal options now that I can use the oven!  I’m excited to start up some real baking too!  Apple crisp, plum cake…mmm 🙂

Fall also means it’s soup season for me!  I LOVE soup!  I made a curried butternut squash soup last week that I thoroughly enjoyed, (Hubby isn’t a fan of squash) so I might make it again this week for work lunches.

I’m wondering, what’s your favourite(s) fall meal to make?

Menu Plan for the Week of September 19

I’ve got a hankering for some cupcakes with cream cheese icing…but I’ll probably end up making banana muffins and peanut butter cookies (for husband…okay…and me!) instead!

I guess though, we need actual proper food for dinner this week !  Here’s what I’ve got in mind:

I think I’d also like to make a pot of soup (maybe Hamburger Vegetable Soup) for lunch on the weekend and for the freezer (makes for easy work lunches in the Fall).  Have you got a great soup recipe to share?

Menu for the Week of August 22, 2011

I’ve been feeling completely uninspired the last couple of weeks when it comes to menu planning!  I’ve been feeling exhausted (and life has been busy!) so we’ve been munching on things we’ve found in the freezer and cupboards.  Totally not stellar nutrition!

But, I feel as though I have a bit more inspiration this week and I’m forcing myself to get over how tired work at the golf course and life are making me feel!  Just so we can eat more healthfully! 🙂

Here’s what I’ve got in mind for the week:

Monday:  Dinner at my parents since we missed Sunday’s dinner (a weekly thing that we love!)
Tuesday:  Oriental Beef in the slow cooker (will post the recipe later), baby potatoes, salad
Wednesday:  I think I’m on my own as hubby has another out of town soccer game.  I’ll probably make a huge Greek salad.
Thursday:  Chicken Stirfry over brown rice
Friday:  Possibly out to eat or Waffles for dinner
Saturday:  Black Bean & Salsa Burritos
Sunday:  My parents are out of town so I’ll make a meat & potato kind of meal that Jesse will enjoy.

Menu Plan for the Week of July 18, 2011

Now that life is returning to a somewhat normal routine and all of our out of town guests are gone and I’m back from Colorado, I thought I would help myself out by making a menu plan once again!

I’ll be pulling some things out of the freezer that I made during my freezer cooking session with my mom!  Here’s what we’ll be eating in no particular order:

Since our weather seems to be a bit “under the weather” I’m making use of our oven more than normal for this time of the year!
