Menu Plan Monday – Week of May 30, 2011

I sort of played hooky with my menu plans for the last couple of weeks.  I had menu plans, but I just didn’t post them! 🙂

I’m not quite sure what to make this week as our weather has been a bit…uh…less then fantastic.  Although, today is looking like it could be quite nice!  So, I think I’m just going to go ahead and make up our menu of anything I want (BBQ’s!)  Do you find that the meals you cook relate to the weather?  I mean, who wants stew on a hot day?

Here are a couple of menu planning ressources that I found for you:

Here’s what I have in mind for the week:

  • Teriyaki Chicken, Ancient Grains (a mix of quinoa, barley, millet, spelt, rye, rice…etc, that cooks up like rice), steamed veggies
  • BBQ Pork Satay, foil wrapped veggies cooked on the BBQ, potato salad
  • Black Bean and Salsa Burritos
  • Chicken Lazone, Caesar salad
  • French Toast (will post the recipe later this week!)
  • Possibly out for my Father-in-Law’s birthday one night

Menu Plan Monday – Week of May 9, 2011

I thought to make Menu Plan Monday a bit more interesting for you, I would start posting links to some menu planning resources that I’ve found on my travels around the web.  I have to admit, I do think my Menu Plan Monday is a bit boring as I haven’t been that adventurous in my meal choices lately! (or ever?)  But, planning a menu is absolutely crucial to me if we ever want to eat and save some money by not impulse shopping!

Here’s what I have in mind for our menu this week:

Menu Plan Monday – Week of May 2, 2011

I’m feeling like I should have a lazy menu this week.  You know, meals that don’t take very long to prepare!

I’m finding now that I’m back to work at the golf course and still keeping up with Simply Frugal, I don’t have much energy to put into making dinner!  The golf course wears me out physically as I’m doing all the gardening work by myself this year. (I should keep track of how many shovelfuls of dirt I’ve shoveled!)

I don’t even feel like going to the grocery store, so I’ll be working with what I’ve got on hand! 🙂 Well, except I do have to go for some milk and fresh fruit & veggies…  Here’s what I’ve got in mind for the week:

Monday:  Teriyaki Chicken (carried over again!), mashed potatoes, steamed vegetables
Tuesday:  Cheesy Beef & Rice, Salad
Wednesday:  Perogies & Sausage, raw veggies and dip (my husband’s specialty 🙂 )
    Thursday:  Chicken and Broccoli Pie
    Friday:  Out to eat!!

This is all subject to change since my brother will be in town this week!  Yahoo!

Menu Plan Monday – Week of April 25, 2011

I think it’s safe to say that Spring is finally here.  We had snow a couple times last week, which is really unusual for our area, but we hit highs of 18 degrees (celcius) over the weekend!  Perfect for Easter weekend!  Did you have a good weekend?  We managed to get in a couple of hikes and a nice visit with my husband’s extended family on Friday and Saturday!

Here’s what I’ve got planned for dinner this week:

Monday:  Sloppy Joe Calzones (I make pizza dough for the wrapper instead)
Tuesday:  Leftover ham from Easter, mashed potatoes, salad and veggies
Wednesday:  Teriyaki Chicken (carried over), brown rice, steamed veggies
Thursday:  Pasta of some sort, will update with the recipe I use!
    Friday:  Out to eat?

Menu Plan Monday – Week of April 18, 2011

Another week of meals to plan!  I’m not 100% sure how this week is going to end up playing out as my Mother-in-law is coming to stay with us for Easter weekend.  And I’m sure you know things never go according to plan when there’s guests!  But for sanity’s sake, I’ll plan the menu like normal, after all, we all have to eat!

    MondayBeef Stew, salad
Tuesday:  Spaghetti (anyone have a to-die for tomato sauce recipe?), garlic bread, salad
Wednesday:  I’ve got an Indian themed dinner to attend and I’m bringing my cheater samosas. 🙂
ThursdayTeriyaki Chicken, steamed veggies, mashed potatoes
Friday:  I think MIL wants to take us out for my belated birthday dinner! I’ll also make waffles for brunch as I think I have Friday off!

Menu Plan Monday – Week of April 11, 2011

I figured out a new system that may work better for me when it comes to menu planning.  Plan the menu on Saturday!  That’s what I did this weekend and I thoroughly enjoyed not having to think about it at all Sunday night. (or in my case lately, Monday mornings!)  Next weekend I may try planning to two weeks to have an even easier time!

This week’s menu is full of more simple meals.  I’m starting back to work at the golf course on Tuesday and I’m generally tired out of my mind for the first couple of weeks I’m back, and don’t want to mess with “fancy” meals! 🙂  Here goes:

Monday:  Sweet & Sour Meatballs, brown rice, steamed veggies (and possibly roasted cauliflower with some spices)
Tuesday:  Chicken and Broccoli Pie, carrot sticks
Wednesday:  Homemade Macaroni & Cheese, Salad
    Thursday:  Pepperoni Pesto Pizzas, salad
    Friday:  Out to eat

I think I can manage that!  To see what other families are eating this week, visit I’m an Organizing Junkie!
