I feel as though I’ve forgotten how to menu plan it’s been so long since I’ve done one! I even had to ask for some help with meal ideas from the fabulous folks at the Simply Frugal Facebook page!
I did manage to pull some meals together and have restocked our fridge after our visit with family.
Monday: Italian Sausage and Potato Roast
Tuesday: Sweet & Sour Meatballs, mashed potatoes, steamed veggies
Wednesday: It’s my birthday…and I’m not cooking! 🙂 It’s out to eat!
Thursday: Chicken Stirfry
Friday: Black Bean and Salsa Burritos

Actually, this week, I won’t be having a menu plan! We’re headed out of town for a week and leaving my parents and neighbours in charge of our house while were gone! Unfortunately for you, this means I won’t be around as much as I usually am as we’ll either be on the road or visiting with family. I do hope to have the regular daily posts up (maybe not as plentiful) for you to enjoy though! You’ll just have to make sure you answer each others questions and whatnot! It’s about community after all (and helping others save!)

Well, it’s becoming more springlike as each day passes around these parts! I’m loving it! I’m also getting excited about planning my container garden this year. I fully intend on nurturing it and reaping the benefits! (unlike last year…I was a bit neglectful!)
I pulled out an old issue of Kraft What’s Cooking magazine and it gave me tons of ideas for meals this week.
I would also really love to make these this week as a treat! Lemon Cream Cheese Cupcakes!

Feb 28 | Menu Planning
I think it’s time I start doing a pantry challenge of sorts over the next couple of weeks! Time to clear out the freezers and the closets (our pantry)! I actually went grocery shopping on Saturday night…shocking! I usually go on Monday mornings! The only things I bought were milk, fruit, vegetables, and ground beef. I’m going to challenge myself to make meals from the stuff I already have on hand. I know I’m not going to have any troubles this week as I’ve got so much stuff to go through! Have you ever done a pantry challenge to use up everything you have on hand before buying anything new?

I’m also in need of a sweet dessert recipe for a baby shower I’m attending on the weekend. Have you got a fabulous dessert/bar/trifle/tart recipe that’s a crowd pleaser?

Somehow I’ve found some new inspiration for menu planning this week. I think it may have been all the good food I ate while I was away last weekend! While we were out to eat one day for lunch, I ordered an amazing spinach salad that I want to try and recreate at home. I’m not sure it would go over with my husband though so I think I’ll try it for lunch one day this week. (I’ll list the ingredients and dressing I’ll be using after my dinner selections)
Here’s what I have planned for dinners this week:
Monday: Black Bean and Salsa Burritos
Tuesday: Chicken Veggie Stirfry
Wednesday: Creamy Tomato Soup, Grilled cheese sandwich (using my 5 Minute Artisan bread dough!)
Thursday: Sweet & Sour Chicken, brown rice, steamed vegetables, salad
Friday: Most likely out to eat with a gift card we have!

Feb 7 | Menu Planning
This week is going to be so easy when it comes to meals! I’m heading out of town on Thursday and will be returning sometime on Monday, so I’ve only got three dinners to look after! I’ll make sure to make enough for leftovers so my husband will have something decent to eat! Here goes:
Monday: Leftover pizza and Cauliflower & Cheddar soup (great combination…)
Tuesday: BBQ Beef in the slow cooker(I’ll be using cheap steaks instead of roast to clean out my freezer), mashed potatoes, steamed veggies
Wednesday: Chicken & Brocoli Pie, carrot sticks
