Whew, I’m finished! And my feel are sore! Here are the cookie recipes. (The not so good but taste delicious, snacks!)
Ginger Crinkles:
For some reason, these didn’t turn out as well as the first time I made them. Maybe I should have used less oil, as they really spread out this time.
2/3 cup vegetable oil
1 cup sugar
1 egg
1/4 cup molasses
1 3/4 cups flour
2 tsp ground ginger
1 tsp cinnamon (or more)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
sugar for rolling
Preheat oven to 350 degrees. In a large bowl, whisk oil with sugar, whisk in egg until smooth, whisk in molasses. In a separate bowl, mix flour, ginger, cinnamon, baking powder, baking soda, and salt. Stir into molasses mixture to form moist dough. Shape into balls, roll in sugar and place on cookie sheet 2 inches apart. Bake at 350 degrees until flat, cracked and browned all over – about 12 minutes.
Peanut Butter Cookies:
1/2 cup butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1/2 tsp vanilla
1 egg
1 1/4 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup chocolate chips
Preheat oven to 375 degrees. Mix all ingredients in a large bowl. (I used my Kitchenaid mixer) Form rounded balls and place on a cookie sheet. Press a fork into each cookie ball twice. Bake for 10 – 12 minutes. Makes 2 dozen.
Here are some of the things I did to make my baking day run smoother:
- I made good use of my Kichenaid mixer
- Kept a sink full of hot soapy water so I could clean as I worked
- Used two sets of measuring spoons/cups
- Knew I had all the neccesary ingredients on hand
- Made sure I had pulled dinner out of the freezer. After all, if I didn’t have dinner available to make, that would defeat my money saving plan!

Here’s update #1 on my baking day! (finally!) So far I’ve made the banana bread, banana muffins, and the granola bars. Just the cookies are left. Below are the pictures and recipes.
Banana Muffins:
1 1/2 cups flour
2/3 cups sugar
1 1/2 tsp baking powder
1/4 tsp salt
1 cup mashed ripe bananas (about 2 bananas)
1 egg
1/2 cup unsalted butter, melted
1/4 cup milk
3/4 chocolate chips (I use less)
Preheat oven to 350 degrees. Line 12 muffin cups with muffin liners. Mix flour, sugar, baking powder, and salt in a large bowl. Mix mashed bananas, egg, melted butter, and milk in a medium bowl. Stir banana mixture into dry ingredients just until blended. Stir in chocolate chips. Fill each cup about 3/4 full. Bake for about 32 minutes or until tops are golden brown.
Peanut Butter Granola Bars:I used honey instead of corn syrup. 1/4 cup each of coconut and sunflower seeds
Banana Bread:2 large bananas
2 cups flour (I used 1 cup all purpose and 1 cup whole wheat flour)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter
1 1/2 cups sugar (I use less!)
2 eggs
1 tsp vanilla
1/4 cup butter milk or sour milk (for sour milk: 1/2 tsp vinegar added to milk to equal 1/4 cup)
Preheat oven to 350 degrees. Put all ingredients in a bowl in exactly the same order as they are written. Mix them with a mix master. (or using a bit of elbow grease!)
Makes a 9×13 pan or 2 bread pans
Cake pan: 30-35 minutes
Bread pans: 45-50 minutes

And no, I will not be making the above cake, but would love to know where I can get one!
Since I work seasonally, I’ll be going back to work any day now, so I thought a baking day would be a great idea! Not only will it save me time in the long run, but money as well since I won’t be buying snacks all the time. (The health benefits are probably a bit better too!)
The purpose of my baking day is to make cookies, muffins, granola bars, and banana bread to fill our freezer. So all I’ll have to do is pull whatever I want out of the freezer and put it into my lunch! I’ll post the recipes in my next post after I’m all done baking.

Another week is upon us! And we need to eat. I’m trying some new recipes this week from the latest issue of Simple & Delicious! Here’s our menu:
*BBQ Pork chops, rice, veggies (carried over from last week)
*Greek Chicken (recipe at the bottom), roasted potatoes, Greek salad with this dressing
*Perogy Beef Skillet (Simple & Delicious)
*BBQ pork and penne skillet, using the leftover pork from the other pork chop meal (simple & Delicious)
*Chicken salad sandwiches possibly using homemade buns
Greek Chicken
1/2 cup Mayonnaise
1/4 cup chopped parsley
1/4 cup lemon juice
2 Tbsp chicken bouillon
1 Tbsp oregano
1 1/2 tsp black pepper
2 cloves garlic, minced
3 lbs chicken
Combine all ingredients and pour over chicken. Marinate for about 2 hours. Bake at 400 degrees for approximately 45 minutes.
I’ve also made this recipe in the crock pot and it works well!

Gosh, I have the hardest time planning a menu after getting home from a vacation! I think I should plan the menu before we go away then all I have to do when we get home, is go shopping!
- Monday: Slow cooker Sesame Chicken, rice, broccoli and carrots Cost: Approximately $4.00 this week as I have all spices, sugar, sauces, rice and carrots on hand.
- Tuesday: Simply Lasagna (I’m using cottage cheese instead of ricotta cheese) Cost: approximately $5.50 as I only had to buy the mozzarella and cottage cheese.
- Wednesday: Veggie Chicken Pitas
- Thursday: leftover lasagna Cost: free! I don’t count leftovers.
- Friday: Slow cooker BBQ pork chops, mashed potatoes, broccoli, carrots Cost: approximately $4.25 I bought the pork chops, potatoes and broccoli
BBQ Pork chops
Enough pork chops to feed your family (you can also use ribs) Your favourite BBQ sauce (we like Bullseye) Onion, cut into rings
Place onion rings on the bottom of the slow cooker. Place pork on top of the onions. Pour enough BBQ sauce over top the pork to coat every piece. Cover. Cook on low for about 5-6 hours. (My slow cooker cooks hot so I only cook mine for about 4 hours)
