Banana Chocolate Chip Muffins

Years ago, I spent a summer working in Banff, Alberta.  Quite often, on my way to work, I would stop in at a local coffee shop called Evelyn's and pick up one of their Banana Chocolate Chip Muffins.  They were delicious!  Once I returned home that fall, I was on the hunt for a recipe that would compare.  I found one that even boasted the title of being Evelyn's Banana Chocolate Chip Muffins!  For the life of me I can't remember where I found the recipe, since that was about 10 years ago!

How To Make Homemade Flavored Coffee Cream

I don’t think for a moment that just because I choose to be frugal, I have to miss out on life’s simple pleasures.  As a matter of fact, I think that being frugal makes me appreciate life’s simple pleasures even more!  Or maybe frugality forces me to look for those things in life that can be a pleasure?

One of my simple pleasures is International Delight coffee cream, French Vanilla flavored.  I don’t often buy it, but I’ve been wanting to challenge myself by attempting to make things from scratch at home.  In return for my efforts, I’ll cut down on cost as well as create something that is better for my health without all the additives!

Here’s my recipe for homemade flavored coffee cream (Vanilla):

  • 1 cup Sweetened Condensed Milk
  • 1 cup Milk
  • 2 tsp vanilla

Combine all three of those ingredients in a jar (or even your old coffee cream container), shake it up, then enjoy!  It should last up to 2 weeks in the refrigerator.  (You’ll see all the ingredients and the jar I used in the above picture)

Here are some other flavor combinations you might enjoy:

  • Chocolate Raspberry:  2 teaspoons cocoa powder, 2 Tablespoons raspberry syrup
  • Chocolate Almond: 1 Tablespoon cocoa powder, 1 teaspoon almond extract
  • Strudel: 1 Tablespoon cinnamon, 1 teaspoon vanilla extract, 1 teaspoon almond extract
  • Amaretto:  1/2 teaspoon cinnamon and 1 teaspoon almond extract

What are some of the simple pleasures in your life?

Eating Healthy on a Budget: Cook it Slow

Here we are at the final installment of Eating Healthy on a Budget!  This week it’s all about Cooking it Slow.  By that I mean, using your slow-cooker to make dinner!  This is one of my all time favourite ways to cut costs on my grocery bill.

Not only does a slow-cooker use less electricity to heat than an oven, but since it cooks slowly using low heat, it’s perfect for tenderizing less expensive cuts of meat!  Love that!

Another reason I love Cooking it Slow?  It’s super easy (I can’t mess up!) and there’s no maintenance!  Many times I make a recipe using some meat and a sauce.  I put the meat in the bottom then cover it with an easy sauce that will make it taste delicious!  Then I go about my business for the rest of the day knowing that dinner is basically making itself.

I’ve also noticed that I use less meat in a slow-cooker meal.  The meat seems to go much farther then when I prepare it in the oven or stove top.

Below, you’ll find a bunch of our favourite slow-cooker recipes:

Eating Healthy on a Budget: Make Your Own Seasonings

Last week I started the Eating Healthy on a Budget series with a post on Eating Seasonally. This week it’s all about making your own seasonings!

This is an easy way to eat more healthfully and cut down costs. Chances are, you have many of the spices or other items needed to make many of your own seasonings, on hand already! And since most of the recipes I’ve found make a large batch, it’ll only cost cents each time you use it! I bet many seasonings won’t even cost $1 to make a big batch. What I also love about making your own seasonings is that you can omit the msg and salt that is found in most store bought seasonings!

Here are some of my favourite homemade seasonings:
