Mandy wrote in and gave me a recipe for homemade stain remover that she'd love to share with everyone! She says it works wonderfully but remains economical and environmentally friendly! Love That! Here's the recipe:

Mix it up and put the mixture in spray bottles. Spray it on a stain, then wash as usual.

I thought I would post my recipe for the Black Bean burritos that my husband and I have been enjoying lately! Keep in mind that I’m a big fan of simple, so they’re nothing fancy. But the result is actually quite delicious! Also, the ingredient amounts I have listed are what I use for the two of us. (makes about 4 burritos) Adjust accordingly for your family.

Tortilla shells

can black beans

a green pepper
chopped

can whole kernel corn

salsa
I think I used a bit more then 1/2 cup, not entirely sure

shredded cheddar cheese
Preheat oven to 350 degrees
Scramble the eggs in a large pan with the green pepper
Add the corn and black beans to the eggs
Saute everything for a bit
Add the salsa, heat through
Place the bean and egg mixture in the center of the tortilla shells. And add shredded cheddar cheese
Wrap the filled tortilla shells burrito style
Place in heated oven for about 5 minutes

It’s time for my update on how my first DIY project of 2011 went!
Let me start out by saying that the above picture is not the pasta I made. Unfortunately I’m not off to a great start in my projects as my pasta failed! I think I chose the wrong pasta recipe. It would not feed through my Kitchenaid pasta attachment! I wasn’t about to give up so I tried rolling it out with a rolling pin. Even then, it was so tough, I couldn’t get it thin. Sigh…
But I’m not defeated and I will be attempting it again in the future with a different pasta recipe. I’ll make sure to do another post once I’ve succeeded!
I did manage to make a good pasta dish though. Here’s the recipe I made up:
Creamy Pesto Veggie Pasta
- Pasta of your choice
- cooked chicken (enough for your family)
- carrots
- Zucchini
- Broccoli
- Green pepper
Cook the chicken. Cut vegetables into nice bite sized pieces. Saute all the vegetables in a bit of olive oil. Meanwhile, cook your pasta of choice. Make the sauce while everything is cooking:
- 1 cup milk
- heaping teaspoon of prepared pesto
- teaspoon of flour
- fresh ground pepper
Combine the chicken and vegetables. Pour the sauce over top. Heat just before boiling. Serve the chicken and vegetables over pasta. Enjoy!

The other day I put a plea out on Facebook and Twitter for some easy appetizer ideas. Appetizers aren’t usually my thing. Don’t get me wrong, I love eating them, I’m just not used to bringing them to parties! I’m usually in charge of a dessert. 🙂 So when I was supposed to bring two appetizers to an event on Wednesday, I panicked. But I must say, that you all on Facebook and Twitter saved me! And I’ve now got ideas to last me quite a few more parties! Here’s are all the ideas I received:

- @SAHMum – “Baked brie recipe is: 1 brie round, 1/2 cup orange marmalade, 1/2 cup chopped pecans, 2 tbsp. brown sugar. Spread on top of cheese. Bake at 350 for 20-25 minutes in uncovered corning dish! Serve hot w/crackers!”
- @HappyGeek75 – “Pioneer Woman’s jalapeño poppers. 3 ingredients, total yum.”
- @candiceservais – “tortilla pinwheels: Google for variations on recipe. Basically cream cheese + extras spread on tortillas, rollup, chill, cut!”

- Brenda– “Another easy meatball recipe – take frozen meatballs, put in a slow cooker – add equal amounts of ginger ale and ketchup (ie 2 cups ketchup and 2 cups ginger ale). Put on for a couple of hours – sweet and sour meatballs – very yummy!”
- Lisa O – “Tzatziki sauce and you can dip anything in there, just toast some pita bread and slice into little wedges”
- Carla– “take a can of chick peas throw in in the blender or food processor add lemon and your favorite spice like curry or chili powder if you have fresh cilantro or basil or parsley chuck some in … serve with pita chips (bake in oven cut like pizza), or baked sliced baguette or crackers under $3 appy!!!”

2 chicken breasts diced and cooked
1 block of cream cheese, softened & diced into cubes
1 cup Tex Mex shredded cheese
1/2 cup Frank’s Red Hot sauce
1/2 cup 3 Cheese Ranch dressing
Mix it all together, grated cheese on top and bake 350 for 30 mins” - Sherri– “Or how about a fruit salsa. Kiwi, apple, strawberry or whatever combination you want. Throw into a blender until just mixed together. Serve with tortillas that have been lightly sprayed with Pam cut into wedges and sprinkled with sugar and then baked. Beautiful festive colour amazing summer taste”

Since the year I first discovered you can actually make homemade marshmallows, I've been making them every Christmas since! They are hands down, far better then store bought ones! They even melt really nicely in a mug of hot chocolate. The ingredients aren't exactly the most healthful, being full of corn syrup and white sugar, but that's why they only get made once a year in our household! Besides, calories at Christmas don't count, right? 😉

Line a 9"x13" pan with saran wrap and lightly oil it.
Since I'm obsessed with my Kitchenaid mixer, I used the bowl from it and added the 1/2 cup cold water then sprinkled the 3 packages of gelatin over the water. I let it sit for about 10 minutes. (You can also use a hand mixer for the entire process of marshmallows.)
While the gelatin and water are sitting, Combine the sugar, corn syrup and 1/4 cup water in a small saucepan on the stove and let the mixture come to a rapid boil.
Once it's boiling really hard, let it boil for about 1 minute.
Pour the boiling mixture into the soaked gelatin, be careful, it's really hot! Then turn on the mixer, using a whisk attachment, to high speed.
Add the salt and whisk for 12 minutes, or until the mixture is a thick marshmallow cream consistency.
Add in the vanilla and whisk to incorporate.
Pour the marshmallow mix into your prepared pan and spread evenly.
Take another piece of lightly oiled saran wrap and press lightly over the marshmallow, creating a seal.
Let the mixture sit for a few hours; until it's cooled and firmly set.
On a plate, combine equal parts icing sugar and corn starch.
Remove the marshmallow from the pan and cut into desired size (I cut mine into 1" squares) using scissors. Scissors really work the best for this!
Dredge each piece of marshmallow into the icing sugar mixture.
Store in an airtight container. Can also be placed in the freezer.

This recipe for Oreo Truffles goes on my list of very easy recipes! I made them for the first time last year and they were a huge hit, so of course I had to make them again!
Oreo Truffles

block of cream cheese
softened

Package semi-sweet chocolate
or chocolate melting wafers

Toppings: crushed candy canes
sprinkles...
Crush the Oreos into fine crumbs with a food processor or use a Ziploc bag with a rolling pin/hammer/rock... 🙂
Add the crumbs to a big bowl with the softened cream cheese. I use my Kitchenaid mixer to mix until it was all well incorporated.
Roll the cream cheese Oreo mixture into 1" balls (or whatever size you'd like) Place on a cookie sheet with waxed paper. Chill in the fridge for about 1 hour.
When you truffles are almost finished chilling, start melting the chocolate slowly. (in the microwave or on the stove)
Drop one or two truffles into the melted chocolate and use a fork to remove them, letting the excess chocolate drip. Place them back on the waxed paper.
Now is when you want to add the toppings, before the chocolate hardens. I used some Christmas sprinkles I had on hand.
